Saumur Brut
The subsoil was formed in the Upper Cretaceous period, 90 million years ago, at the same time as that of Vouvray and Champagne. Brut de la Bretaudière is a fresh, elegant blend of Chenin Blanc, which contributes aromas and tension to the wine’s length, and Chardonnay, which contributes fresh fruit on the palate and roundness.
AOC Saumur Brut
Grape varieties – 60% Chenin, 40% Chardonnay
Production – 4,000 to 7,000 bottles per year
Yield – approx. 50 hl/ha
Soil – Clay-limestone on tuffeau, a Turonian sedimentary rock formed 90 million years ago. The roots grow 50 cm into the clay, nourishing the young plants, then wrap themselves around the tuffeau to find other nutrients and water, which are brought by capillary action through the rock.
Climate – The microclimate of the Saumur region is the warmest and driest in the Loire Valley.
Vineyard management – Soils worked and grassed every other row, sustainable agriculture, naturally healthy bunches.
Vinification – Direct pneumatic pressing, slow and gentle so as not to extract bitterness, and fermentation and malo done in vats before entonnage.
Alcohol and sugars – 12.5%, tirage between 8 and 10 g/l depending on vintage.
Storage – Drink within 2 years for its freshness, or within 3 to 5 years to appreciate its evolution and complexity.
Service – Serve well chilled, as an aperitif with, for example, fresh goat’s cheese and fig jam, or as an accompaniment to a fine meal of eggplant caviar, gazpacho and fish mousseline. Last but not least, Saumur Brut is the perfect wine to round off a festive meal.
